Green mint leaves bring their familiar fresh aroma to Moroccan tea, cold drinks and everyday recipes, contact with hot water releases a clean cooling fragrance and a smooth mint flavour that works beautifully in both drinks and savoury food
When brewed alone, the leaves make a naturally caffeine-free herbal drink that may be enjoyed hot or chilled, they also naturally contain calcium, iron, magnesium and potassium, although the amount used in a cup or recipe is usually small, so they are valued mainly for their refreshing flavour and aroma rather than as a major nutritional source
How to use
Moroccan mint tea: Add half to one teaspoon per cup together with green tea, pour in hot water, leave for 3 to 5 minutes, strain, then add sugar to taste
Mint infusion: Add about one teaspoon to a 240 ml cup, cover with freshly boiled water for 3 to 5 minutes, then strain and serve hot or leave it to cool
Cold drinks: Prepare a slightly stronger infusion, allow it to cool, then pour over ice with lemon, orange or berries
Yogurt and smoothies: Crumble a small pinch between your fingers, then blend it with plain yogurt, berries, mango or a fruit smoothie
Salads and dressings: Crumble a little over cucumber, tomato, grain or fruit salads, or mix it into a dressing made with yogurt, lemon and olive oil
Cooked vegetables: Add a small pinch to peas, potatoes, carrots or courgettes near the end of cooking so the mint aroma remains clear
Lamb, chicken and fish: Mix with yogurt, lemon, garlic and olive oil for a sauce or marinade, or crumble a little over the finished dish
Begin with a small amount and add more after tasting, mint releases its aroma quickly and its flavour becomes more noticeable as it rests
